I want to share a very simple but original recipe for onion soup. They say that for the first time it was cooked in France by King Louis himself, I don’t know which account. But such a soup was cooked due to the lack of an assortment of products. There was only a piece of butter, champagne and ... onions. It turns out that one can also cook something from such components. Not from an ax, of course, but still!
I only cook it on chicken stock. To my taste, it is both tastier and more satisfying, and children eat with pleasure (if desired, you can replace it with vegetables). In my family, this is considered a festive dish. Despite its simplicity, often I do not cook it. Probably because you can’t cook it for several days, like borsch. Only fresh eat this soup.

And so the ingredients:
  • 1. Onions - 100 g.
  • 2. Butter - 1 tablespoon.
  • 3. Olive oil - 2 tablespoons.
  • 4. Wheat flour - 1 teaspoon.
  • 5. White bread - 2 slices.
  • 6. Hard cheese - 50 g.
  • 7. Ground black pepper - to taste.

Cooking Delicious Onion Soup


Cut the onion into half rings, not too thin. Approximately 2-3 mm. Otherwise, it will simply dissolve in the broth.

We spread the onions in a frying pan and fry in a mixture of olive and butter. 2-3 minutes on high heat, stirring continuously, then leave on slow, close the lid and simmer for 20 minutes.

While the onion is preparing, you can fry the croutons. Cut the bread into squares and fry in butter until browned. You can eat soup without them, but it will not be right ...

Grind the cheese on a coarse grater. I do not recommend cream cheese, it is better to choose Dutch, Eden, Russian or any hard varieties.

In the ripened onion, which should become brownish, add flour and mix quickly to prevent lumps. Flour will make the broth a little thicker. But look, do not "overdo it", otherwise you will get onion porridge, not soup.

Combine the broth and onion. Let it simmer for 5 minutes. Our soup is ready! It is good to add a little black pepper, it goes well with onion flavor. We do not add greens, it interrupts the piquant taste of the soup.

And before pouring on plates, allow the dish to cool slightly and insist. Then sprinkle with grated cheese and do not forget the croutons. You will get 3 servings. Bon Appetit!
